B No L T Dip


Bacon Lettuce and Tomato sandwiches are a summertime classic when the tomatoes are abundant on their vines and the sun is shining brightly. The Kitchen celebrates those weeks when Friends of the Kitchen may help themselves to a tomato or two from the garden while I fry up a little bacon and slice fresh out of the oven bread for a mid afternoon BLT snack. I miss those weeks. I always miss summer when it is not summer. I especially miss summer in January when the only tomatoes available are the overpriced cardboard variety in the grocery store.

Lest I feel tempted to sulk through the dreary weeks of January Mimi's Kitchen entertainment schedule forces my attention on sitting on the edge of my seat, nail-biting overtime college football championships and, of course, the requisite football game dips, chips, and easy to serve finger food.

One of my favorite keep on hand dips is Mimi's very own B No L T Dip (aka Bacon no Lettuce Tomato Dip). It is equally tasty with chips or veggies. Of course the tomatoes are not the vine ripened, warm from the sunshine treasures that we enjoy in August but they add a nice taste to the dip and they remind Friends of the Kitchen that after the final touchdown of the season comes longer days, warmer temperatures, planting day, and finally the sweet, juicy treasures of summer.

This dip is a family favorite served for game-day, backyard BBQs, and as a delicious snack food when a sit down meal is not on the menu.

B No L T Dip

1 pound bacon, cooked crisp and well drained

1 cup sour cream

½ cup mayonnaise

½ cup plain yogurt

1 tomato, seeded and chopped

Chives

Cook the bacon crisp. Drain well on paper towels. When the bacon has cooled set aside one strip for garnish and chopped the rest finely. Break the reserved piece into small pieces and set aside.

With a rubber spatula blend together the sour cream, mayonnaise, and yogurt. Stir in the finely chopped bacon. Spoon the dip into your favorite game-day serving bowl and top with chopped tomato, reserved bacon pieces and a sprinkle of chives.

Serve dip with your favorite chips and veggies.
